Ingredients
- 1 1/2 lbs salmon fillet
- 2 tbsps extra-virgin olive oil
- salt & ground black pepper
- 1 lb white or cremini mushrooms
- 2 shallots, minced
- 4 cloves of garlic, minced
- 2 tsps chopped thyme or rosemary (or both)
- 1/4 cup dry white wine
Directions
Tasting Notes: Salmon and Pinot are a perfect pairing almost always and then when you add msuhrooms and some fresh herbs it becomes perfect. The meal compliments both the fruity elements and the earthy elements of Pinot.
Serena's tips: Choose thme or rosemary as they are both distinctive flavors and mixing them dimishes their impact.
