- 3 unpeeled russet potatoes (about 10 oz .each)
- vegetable oil for frying
- coarse kosher salt
- 3 tbsps freshly grated parmesan cheese
- 2 tbsps finely chopped fresh parsley
- freshly ground black pepper
- white truffle oil
Directions
Tasting notes: The white truffle flavor is a delightful contrast with the bright fruit flavors on the sparkling. There is something about a salty potato chip and the pop of sparkling bubbles that is delicious.
Serena's tips: I am not a big fan of frying so if this recipe sounds good to you, you may also want to consider looking for truffle chips at your local grocery store. Definitely use a mandolin to cut the potatoes.
