Ingredients
- 1/4 cup extra virgin olive oil
- 4 salmon fillets, patted dry
- salt & pepper
- 2 lemons
- rosemary, thyme, oregano, bay leaves, coriander seeds, crushed fennel, fresh or dried chile, olives, anchovies (optional flavoring)
Directions
Tasting Notes: Salmon and Pinot noir are always an excellent pairing and will make your mouth water.
Serena's Tips: We love this recipe because we are able to use the lemons from the Cartograph Garden and the olive oil from the Cartograph Estate. It's such an easy way to cook salmon and you can throw all sorts of vegetables along side of it to round out your meal.
